Dairy Free Recipes : Enchiladas, Spanish Rice, and Refried Beans

We had this meal over a month ago and I can’t quit thinking about it. Often I find myself making one item because there is only two of us, and forgetting that some meals are even better with sides. This was true of enchiladas. Normally, I would have just made enchiladas and we would have ate that. The hubby’s parents came down and shared their enchilada dinner, complete with spansh rice and refried beans. Mmmm. I have never enjoyed enchiladas more.

Dairy Free Recipe : Enchiladas, Spanish Rice and Refried Beans

2 flour tortillas per person

1/2 pound ground beef

1/2 pound ground turkey

1/2 medium onion chopped

1 tablespoon chopped garlic

1 can or package of dairy free enchilada sauce

Dairy Free Sour Cream

Dairy Free Cheese

1 box of Dairy Free Spanish Rice

1 can vegetarian refried beans

Directions:

Heat oven to 350 degrees. Brown meat with onion and garlic. Drain if needed. Roll meat up in tortillas placing them in a glass baking dish, seam side down. Pour enchilada sauce over the top. If you want you can sprinkle chopped dairy free cheddar cheese over the top. Personally, I have gotten so used to enchiladas without cheese that I do not even bother.  Place in oven for about ten minutes. You will want to keep a close eye on these so that they do not overcook. If you are also making cheese enchiladas then they are ready when the cheese melts. Make the Spanish Rice while the enchiladas are in the oven according to the box instructions. Heat the refried beans in the microwave or on the stove. Serve and enjoy!

Dairy Free Recipe : Turkey Meatballs and Pasta

I made myself an excellent dairy free recipe for lunch today with some extra ground turkey I had thawed for dinner tonight (Shepards Pie Recipe coming soon!).   I am a meatball fanatic, or I should say I am recently a meatball fanatic.  When I was young I wouldn’t eat any meatball, even in the Spaghetti-O’s.  I have found in the last year that I like experimenting with many different varieties of balls of meat. 

Today’s meatball was made with ground turkey, making it a bit healthier than your normal meatball.  I added way way way to much garlic and I didn’t really measure as I was going so some of this will be trial and error.

Dairy Free Recipe : Turkey Meatballs and Pasta

Made two servings 

Ingredients for Turkey Meatballs

1/4 pound ground turkey

3 tbsp chopped carrots

3 tbsp chopped celery

3 tbsp chopped onion

1/2 tsp garlic powder

1/2 tsp ground cumin

1/8 cup bread crumbs

Ingredients for Pasta

1 cup noodles  (boil according to package instructions)

1/4 can of red kidney beans

1/4 can of creamed corn

1/4 can of stewed tomatoes

Directions

Mix all of the meatball ingredients together and form into small meatballs.

Fry the meatballs in a small amount of oil.

Throw creamed corn, tomatoes, kidney beans and cooked meatballs in with the pasta and mix together.  Heat through and serve.

I’m not sure what the health value is on this with the creamed corn but it does have a lot of veggies in it so I’m thinking if you made it a full meal with a salad it wouldn’t be too bad.  What do you think?

Dairy Free Recipe : Sausage and Rice

I love coming up with random recipes with whatever I have on hand.  This is one of those recipes.  I came up with this last week the day before I went to the grocery store, AKA the day with little food in the fridge.   I had already been making sausage for my breakfast sandwiches so I just used the sausage that was left over but I’m sure this could also have been made with hamburger as well.

Sausage and Rice Dairy Free Recipe

This made one serving

1/4 cup brown rice (cook according to package directions)

1/4 cup chopped carrot

1/4 cup chopped celery

1/4 cup chopped onion

1/2 cup cooked ground sausage

1 tsp garlic powder

Instructions

I began by cooking the rice in its own pot then added the rest of the ingredients while there was still liquid in the rice.  This let the veggies cook some while the rice finished cooking. 

 This recipe did remind me that I think I would like a rice cooker.  Does anyone have one?  What do you think of it? Does it work as well on brown rice as white rice?

Dairy Free Recipe: Beef Stroganoff

I made this the other weekend when the hubby’s parents were in town for the weekend to help us get our land ready to move the new house in.  They loved it, even though they said it would be better when it wasn’t so hot outside! And yep, that is fresh corn on the cob from my garden in the picture below!

Dairy Free Beef Stroganoff

 Ingredients:

Beef (I used some cheap steak we had in freezer cut into small piece but you could use hamburger, roast or steak as well.

1 cup mushroom chopped fine

1 cup onions chopped fine

1 cup flour

1 cup soy milk

1/2 cup dairy free margarine

2 tablespoons chopped garlic (the chopped kind in the jar)

1 package onion soup mix

1 cup merlot or red wine

5 to 6 cups egg noodles or whatever you need to bulk it up for your family

Directions:

In a pan melt the margarine then add onions, mushrooms and garlic and saute for a minute.  Then add in the milk and flour until somewhat thick.  Place this in a crockpot on high.  Add in the beef, onion soup mix, and merlot.  Cook in the crock pot on high all afternoon.  Before serving cook the egg noodles and mix them into the crockpot. 

Serve with or over mashed potatoes

I’m so not good at this part! This fed four of us that night and I froze two individual meals for me for later.

I would also like to add a disclaimer, especially to this recipe.  The amounts called for are estimates. You may find that you need to add more or less of something to make it thicken the way you want or for your own families tastes.
