I know you are going to look at this and wonder, what the H is she thinking? I don’t want burnt food! Well, all I can say is it tastes much better than it looks! I thought the same thing when I pulled that cornish hen out of the oven until I tasted it! This is good with rice and veggies!

Dairy Free Recipe : Molasses Cornish Hen
1 cornish hen (could use chicken of course)
2 tbsp molasses (you could probably use regular syrup if you want but I’m not sure how it would change the recipe)
2 tbsp ketchup
1 tbsp honey
1 tbsp soy sauce
pinch of ginger powder
1 tsp of garlic powder
Directions:
Mix everything together and brush part of the mix onto the cornish hen. Cover with foil and cook for half the time recommended on the cornish hen package. Remove foil and cook the rest of the way occasionnally brushing with the molasses mixture. Enjoy!

I love this stuff. It is so easy to make and tastes so good. I make it when I have leftover french bread. I have only made it for myself for lunch so I’ll have to make it soon so that the hubby can try it! This is really good served with roasted veggies!

Dairy Free Recipe : Dairy Free Toasted Chicken with Basil and Onion
Ingredients:
Shredded Chicken
Onion sliced into thin strips
Dried Basil
French bread sliced
Directions:
Place chicken on the slice of french bread. Add a few strips of the onion then sprinkle with a bit of the dried basil. Toast in the oven until bread is desired crispness. It doesn’t take very long! If you had some you could sprinkle some dairy free cheese on the top but I like this recipe without.

It was surprising to me how many of the buffalo sauces have dairy in them. If you do not make your own sauce then be very careful when purchasing buffalo sauce to make sure it is dairy free. Of course the best way is to make your own but that isn’t always as easy as opening a bottle and pouring it in! Here’s how I make hot wings, you can make your own sauce or just buy some ready made buffalo sauce.

Dairy Free Chicken Recipe : Dairy Free Hot Wings
Ingredients
Chicken wings or strips
Buffalo Sauce
Butter
Oil for frying
Flour
Directions
Flour the chicken wings and fry as you would normally. Mix the butter in the buffalo sauce and keep warm in a pot on the stove. Once you have fried the wing, place them in the buffalo sauce before placing on a plate to serve.

This is one of my favorite meals to make and I have it often for lunches. Its great to have with some carrot or celery sticks though I also love to just have two or three of them at once! This would make a good lunch at home for kids and it makes an easy to fix lunch on the weekends if you make it then freeze it for later as one of your OAMC recipes.

Dairy Free Recipe: Chicken Pot Pie
Ingredients
1 can turkey gravy
1 can creamed corn
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped mushrooms
1 large chicken breast cooked and chopped up
pie crust (make your own or buy it in the freezer section)
muffin pan
Directions
Throw all the ingredients in a pot and heat them up together. You may have to add some water if it seems to thick. Line the muffin tins with pie crust. Fill the pie crust with the chicken mixture then place pie crust on top and seal so that it makes a little pot pie. Poke the top of the crust a few times with a fork.
Bake in a 375 degree oven for about twenty minutes or until browned.
This dairy free recipe can either be flash frozen before you cook it or after. I tend to freeze it after I cook it but if you don’t you will have to cook it for longer. I also use different vegetables quite often. If I don’t have any fresh veggies then I use canned vegetables instead. You can always use whatever veggies you enjoy the most!

I made myself an excellent dairy free recipe for lunch today with some extra ground turkey I had thawed for dinner tonight (Shepards Pie Recipe coming soon!). I am a meatball fanatic, or I should say I am recently a meatball fanatic. When I was young I wouldn’t eat any meatball, even in the Spaghetti-O’s. I have found in the last year that I like experimenting with many different varieties of balls of meat.
Today’s meatball was made with ground turkey, making it a bit healthier than your normal meatball. I added way way way to much garlic and I didn’t really measure as I was going so some of this will be trial and error.
Dairy Free Recipe : Turkey Meatballs and Pasta
Made two servings
Ingredients for Turkey Meatballs
1/4 pound ground turkey
3 tbsp chopped carrots
3 tbsp chopped celery
3 tbsp chopped onion
1/2 tsp garlic powder
1/2 tsp ground cumin
1/8 cup bread crumbs
Ingredients for Pasta
1 cup noodles (boil according to package instructions)
1/4 can of red kidney beans
1/4 can of creamed corn
1/4 can of stewed tomatoes
Directions
Mix all of the meatball ingredients together and form into small meatballs.

Fry the meatballs in a small amount of oil.

Throw creamed corn, tomatoes, kidney beans and cooked meatballs in with the pasta and mix together. Heat through and serve.

I’m not sure what the health value is on this with the creamed corn but it does have a lot of veggies in it so I’m thinking if you made it a full meal with a salad it wouldn’t be too bad. What do you think?

Chicken bouillon has milk in it. For that matter, so does beef bouillon. At least all the brands I’ve used have had it in it. I now make my own chicken broth and freeze it, not only is it a dairy free recipe but it is also much tastier than some old powdered chicken broth. I usually set aside a day a month and just cook up a whole bunch of dairy free chicken broth that I can use throughout the month in many other dairy free recipes.
Dairy Free Recipe: Chicken Broth (I realize the picture isn’t that appetizing but this had also dethawed a bit before I snapped the photo)

Ingredients:
Fresh veggie clippings (ends of celery, carrots, onions, etc)
15 chicken wings (or equivelant or whatever was cheapest. Chicken with the bone in produces the best taste)
Directions:
Boil all of this in a large stock pot. I usually start in the morning and by lunch I take the chicken out and eat it for my lunch. I also drain the liquid through a colander into a bowl. I then fill the stock pot with the chicken bones and veggies back up again and set it all to boil for another round. Pour the broth in the bowl into ice cube trays and set in the freezer. After the stock pot full of goodies has boiled for another couple of hours I repeat the process and freeze the rest. Depending on how the second set of broth looks and taste I may make a third batch but most of the time all the good stuff has cooked out in the second batch. You can either leave the ice cube trays in the fridge until you are ready to use the cubes or you can break the frozen cubes into a ziplock bag and freeze that so that you can grab however many cubes you need.
Serving size:
I generally use about six ice cubes when a recipe calls for a cube of bouillon but I also adjust and add more or less as needed for a recipe.
