I love having leftovers and coming up with new dairy free recipes the next day with whatever I have on hand. Almost always I end up with something good and this was one of those dishes. I happened to have some shrimp and sausage that needed to be used in the fridge so I put them together!

Dairy Free Recipes : Dairy Free Shrimp and Sausage Pasta
Ingredients
Shrimp ( however much you have and however much you want)
Sausage (a quarter of a pound ground and cooked)
Egg noodles cooked
veggies on hand
a few cubes of broth
Directions
Mix everything together and heat until broth is melted and heated through. Enjoy!

I used to love love love hamburger helper back before it was known I had a milk allergy, and way before they had the numerous versions they now have. Now I find myself often coming up with new versions of homemade hamburger helper to satisfy my need for the pasta and burger mixture. I hope you like this one! It was quick and easy!

Dairy Free Pasta Recipe: Turkey Burger Homemade Helper
1/2 pound ground turkey
1 can corn with liquid
Broth (about 8 cubes)
Directions:
Brown the turkey. Add in the corn with liquid, the broth and as much pasta as you think you will need. I usually put about two to two and a half cups of pasta, more if we’re poor that week and I need to stretch the meal. Add in water until it just covers the pasta. Bring to a boil, cover and lower heat to a simmer for 15 to 20 minutes. Just like real hamburger helper!

I made myself an excellent dairy free recipe for lunch today with some extra ground turkey I had thawed for dinner tonight (Shepards Pie Recipe coming soon!). I am a meatball fanatic, or I should say I am recently a meatball fanatic. When I was young I wouldn’t eat any meatball, even in the Spaghetti-O’s. I have found in the last year that I like experimenting with many different varieties of balls of meat.
Today’s meatball was made with ground turkey, making it a bit healthier than your normal meatball. I added way way way to much garlic and I didn’t really measure as I was going so some of this will be trial and error.
Dairy Free Recipe : Turkey Meatballs and Pasta
Made two servings
Ingredients for Turkey Meatballs
1/4 pound ground turkey
3 tbsp chopped carrots
3 tbsp chopped celery
3 tbsp chopped onion
1/2 tsp garlic powder
1/2 tsp ground cumin
1/8 cup bread crumbs
Ingredients for Pasta
1 cup noodles (boil according to package instructions)
1/4 can of red kidney beans
1/4 can of creamed corn
1/4 can of stewed tomatoes
Directions
Mix all of the meatball ingredients together and form into small meatballs.

Fry the meatballs in a small amount of oil.

Throw creamed corn, tomatoes, kidney beans and cooked meatballs in with the pasta and mix together. Heat through and serve.

I’m not sure what the health value is on this with the creamed corn but it does have a lot of veggies in it so I’m thinking if you made it a full meal with a salad it wouldn’t be too bad. What do you think?

We are having so much fun cooking at home again! Every night has been a treat, and a challenge, to not only get to cook but come up with something good with the limited supplies we could afford right now. Last night we had an old stand-by that we both enjoy and is easy to cook as well as being a great dairy free recipe!
I had never had salmon patties until my mother-in-law made them one night and I’ve been addicted ever since! She generally serves them with macaroni and cheese (dairy free butter noodles for me), peas, and corn bread. I don’t make mine with the corn bread and neither the hubby or me is very big on peas so we end up with just the pasta and patties!
Dairy Free Recipe : Pasta and Patties
Salmon Patties
1 can salmon (drained and flaked)
1/4 cup chopped green onion
1 large egg
1 tbsp lemon juice
1 tbsp brown mustard
1 cup bread crumbs
Directions: Mix all of this together in a bowl and form into patties. I then fry these in a skillet with very little oil until browned on both sides.
Butter Noodles
2 cups noodles (boil and drain the water)
1/2 cup dairy free butter
1 tsp garlic powder
Directions: After boiling the noodles and draining them I throw the butter and garlic powder in the pot with them. The heat of the cooked noodles helps to melt the butter.
I serve these together and throw in some microwave mac and cheese for the hubby. This is an easy dairy free recipe that takes almost no time to cook!

Before we lose electricity I have to use everything I can out of the fridge. This is causing me to get very creative when it comes to what is left in my fridge and the freezer. The thought of having to throw food away is really bothering me but we’ve got most of it eaten and won’t have to throw away much and I may run whatever is left up to my neighbors. Their bachelors and seem to live on mostly beer so I would feel good knowing that for a few meals they could grill up some chicken or pork steaks. I wonder if they would take our frozen veggies?
Anyway, I’ve been getting creative. Here is the dairy free recipe I came up with for lunch one day.
Dairy Free Recipe: Pasta with Sausage and Shrimp

Ingredients:
1 cup egg noodles
1/4 pound of your favorite ground sausage (I used Italian, make sure it doesn’t have milk in it!)
1 cup frozen shrimp, thawed and the tails taken off
1 cup frozen veggies (I used a broccoli, cauliflower, carrot mix because I needed to use it)
1 tablespoon garlic powder
6 cubes frozen chicken broth
Directions:
Cook the egg noodles according to package directions (boil them). While the noodles are boiling, brown the sausage. After the sausage is browned add the cooked noodles to the pan with the sausage and throw everything else in there as well. Cook on medium heat until the shrimp and veggies are heated through.
Serving Size:
hmmm, this fed me alone for lunch but would probably feed two people if a salad and breadsticks were added.
